I am looking for good thorough tutorials for modelling a more or less realistic human head by using polygon modelling techniques.
I would prefer written tutorials to video tutorials...

In 'no video and polygonal only' category, I think best chance are 'classics', like Jeanne d'Arc on 3d total, or maybe something else form 3d Total. Or to do a search for work of Francisco Cortina or Steven Stahlberg - it seems there's still something possible to find, like this set of guides. Blender's Blenderella by Angela Guenette is also nice, it's video - but all examples are provided ( don't know is it still commercial or it's free). Forgive me if you already have all that, but hardly to find these today, where everything is video and zBrush.
If you want to go without any, I think the best approach is to import 3d model as reference, a scan or anything else you prefer, let's say Blur's models that coming with SI Face Robot are really nice as 'possible but stylized' references - then try to do the same, face by face in 3d app. Should be a best reference, to have a 3d model - sometimes, photos are a bit too much influenced by interventions in lighting, hairdo, makeups and so on.

Not necessarily for human head specifically but I like Aaron Sims vol 1 and 2 Creature Designs series. He uses XSi, Photoshop and Zbrush.
The principle can be applied to realistic human figures.
